  • 1 yellow pepper chopped

  • 1/2 tsp salt or alternative

  • 1 red onion chopped

  • 1 red pepper chopped

  • 1 courgette chopped

  • 200g couscous

  • 1 ground black pepper

  • 1 tbsp butter


  1. Roast the vegetables with a little olive oil and flavour with the black pepper and salt.
  2. Cook the couscous according to the pack. Add a little butter to it at the end and then stir in the vegetables and serve.
