  • 400ml milk plus 100 ml for mashing potatoes

  • 30g flour

  • 100g cheese grated

  • 600g ham nice, of course!

  • 1kg potatoes peeled and diced

  • 3 leeks sliced - or use peas

  • 30g butter

  • 100g butter for mashing potatoes


  1. Melt the butter in a pan and add the flour. Allow to bubble and cook for 1 min.
  2. Add the milk gradually and whisk into a smooth sauce. Simmer for 3 until thickened. Remove from heat and leave to one side.
  3. In a pan, boil the diced potatoes and cook. Drain well and mash with the butter and milk.
  4. Sauté the leeks, season and add to the diced ham. Mix together with the white sauce and add to the pie dish.
  5. Cover with the mash and sprinkle with cheese.
  6. Bake in oven, 200C, until golden brown, about 20 mins.
