Cellophane noodle salad

  • 1 tbsp olive oil

  • 2 tsp sugar

  • 2 knobs ginger grated

  • 1 tbsp soy sauce

  • 1 pinch five-spice powder

  • 3 cloves garlic crushed

  • 1 handful prawns peeled and deveined

  • 1 bunch coriander chopped

  • 2 limes juiced

  • 1 bunch mint chopped

  • 1 bunch spring onions finely sliced

  • 115g cellophane noodles

  • 230g minced pork

  • 2 red chillis finely sliced with seeds

  • 1 handful nuts roughly crushed


  1. Soak the noodles in boiling water and drain.
  2. Heat the oil in a pan, and cooking in batches, lightly brown the pork with the five-spice powder. Add the garlic, sugar, prawns, and peanuts. Mix the rest of the ingredients for the dressing. Add the drained noodles and the meat with the prawns and season with a little extra soy and a drizzle of olive oil.

Handy Hint

This really is very simple. If you use less chillies than suggested, then the flavours go down well with kids (or mine at least).

    I've never heard of cellophane noodles, so made it with egg noodles and we all really enjoyed it.
