  • 6 tbsp olive oil

  • 1 lemon juiced

  • 1 tin tuna

  • 2 cloves garlic grated

  • 400g fusilli

  • 2 shallots diced

  • 250ml white wine

  • 1 jar fresh anchovies chopped, or a tin of anchovies if you can't get fresh

  • 1 chilli pepper chopped

  • 1 bag spinach salad to serve

  1. Put water on to boil and when bubbling add the pasta, cooking until it is al dente.
  2. Meanwhile, using 1 tablespoon of the olive oil, fry the garlic, pepper and shallots until softened.
  3. Add the tuna and anchovies until also soft, then add the lemon juice, wine and the rest of the olive oil.
  4. Mix this sauce in with the pasta.
  5. Serve with a spinach salad.

Handy Hint

Serve this dish in bowls rather than on plates, it is quite a messy sauce!

I go a few times a year to Abruzzo, Italy and when I visit the Adriatic coast there are certain smells and flavours that remind me of being there, so I came up with this dish. My husband and toddler love this dish and so do my friends! It is cheap, quick and easy too. I would say its a summery dish, perfect with a bottle of Pinot Grigio or Trebbiano!
