  • 500g shortcrust pastry one packet

  • 3 handfuls raspberries

  • 18oz raspberry jam seedless, a jar


  1. Grease a flan dish.
  2. Fill with pastry, prick the base and trim to size.
  3. Blind bake according to the pastry instructions on the pack.
  4. Fill with raspberries.
  5. Melt the jam in a pan.
  6. Pour over the raspberries .
  7. Leave to cool.

    This is so simple, but tastes gorgeous. DS (7)loves it, but some of his friends object in principle to any kind of fruit & veg., so they might not be so keen. He often does most of the work, with me just supervising the hot jam. Easily adaptable with other soft fruit/jam combos. You could even make your own pastry if you have time & energy to spare.
