  • 125g self-raising flour

  • 250g caster sugar

  • 125g soft margarine (or softened butter)

  • 2 eggs

  • 1 handful cherries or any other fruit your children like - sultanas, apricots, etc.


  1. Line a 20cm square cake tin with baking paper and heat the oven to 180C/Gas Mark 5.
  2. Cream the butter and the sugar.
  3. Beat the eggs. Slowly add the eggs and flour alternately, beating well.
  4. Add the chopped fruit and mix.
  5. Pour the mixture into the baking tin. Sprinkle the top with a little granulated brown sugar.
  6. Bake for around 20 minutes or until golden brown on top and firm to the touch. Cool and cut into squares for a lunchtime treat.

    This is a great receipe, it can also be frozen which means you can make it in advance.

    my boys' favourite home-made cake. Very easy to make and they love helping chop the cherries and apricots.
