  • 1/2 onion finely chopped

  • 1 tsp salt

  • 1 green pepper seeded and finely chopped

  • 4 tbsp parsley finely chopped

  • 2 tbsp fresh mint finely chopped

  • 4 tbsp light oil

  • 4 tomatoes finely chopped

  • 2 lemons juiced

  • 1/2 cucumber finely chopped

  • 200g couscous


  1. Pour boiling water over the couscous and drain off any excess immediately. Leave to cool and swell; it should be slightly dry.
  2. Put the chopped vegetables, parsley and mint into a large bowl. Fork the lumps out of the couscous and add it to the bowl. Stir in the salt, lemon juice and oil.
  3. Mix well and leave for 15 minutes. Taste and adjust the seasoning if necessary. Serve at room temperature.

Handy Hint

Time-consuming to chop all the veg - use a chopping machine if possible, or get a friend to help!

    The flavours intensify if made the day before & kept overnight in the fridge. Excellent with barbecues. This is a brilliant way to get children to eat their veg!
