  • 450g brown sugar

  • 115g golden syrup

  • 85g unsalted butter

  • 115g black treacle

  • 1 tsp white wine vinegar

  • 140ml water


  1. Grease an 8-inch square tin with a little butter. Fill a jug with cold water and have it next to your hob or cooker top.
  2. Place all the ingredients into a large (ideally stainless steel) saucepan.
  3. Heat gently until the butter has melted, and then turn up the heat and bring the mixture to the boil as fast as you can.
  4. Boil, covered for two minutes. Then stir regularly, maintaining a fast boil, to thicken the toffee. Test a drop of the mixture in the cold water - when it is ready, the drop will harden and solidify immediately.
  5. Remove the pan from the heat, and quickly place the bottom in a large bowl of water or water in the sink to stop it cooking further.
  6. Pour the toffee into the prepared tin and cool.
  7. Break into pieces before serving.

Handy Hint

Store any leftovers (!) in an airtight tin.
