Stuffed Courgettes

  • 1 onion chopped

  • 1 handful parsley chopped

  • 4 courgette

  • 1 handful cheese grated

  • 1 eggs beaten

  • 1 handful capers chopped

  • 1 handful pine nuts (optional)

  • 2 tins tuna


  1. Simmer courgettes for about 20 mins.
  2. Meanwhile gently fry onion (and pine nuts if using).
  3. Halve courgettes and scoop out most of pulp. Chop pulp and add to onion. Chuck rest of stuff in.
  4. Mix and stuff yer courgettes.
  5. Little bit of cheese on top then bake for 30 mins or so.

Handy Hint

You can substitute almost everything IMO, though I might draw the line at losing the tuna or the courgettes! I have in the past used thyme instead of parsley and missed out the capers and pine nuts and used sweetcorn. Still lovely.
