Simple tomato soup

  • 1 tbsp olive oil (or oil spray)

  • 1 tsp sugar

  • 475ml vegetable stock

  • 1 red onion

  • 1 celery stick

  • 3 tins plum tomatoes

  • 1 carrot

  • 1 handful fresh basil chopped

  • 1 splash balsamic vinegar


  1. Chop the onion, carrot and celery and fry gently for 3-5 minutes in a large pan.
  2. Place the rest of the ingredients in the pan, bring to the boil and then simmer for 15-20 minutes.
  3. Leave to cool slightly before blending until a smoother consistency can be seen (though not fully).

Handy Hint

This is a good soup for people on a diet and is adapted from a slimming world recipe (which uses sweeteners instead of sugar and doesn't use any balsamic).

    This is a lovely simple soup, add any extra herbs or spices to suit.
