Triple chocolate and peanut butter cookies

  • 100g self-raising flour

  • 1/2 tsp vanilla extract

  • 100g white chocolate

  • 100g milk chocolate

  • 100g peanut butter (crunchy works best)

  • 100g light muscovado sugar

  • 300g plain chocolate

  • 1 medium eggs

  • 85g butter at room temperature


  1. Preheat oven to 180C/Gas Mark 4.
  2. Chop 200g of plain, the milk and white choc into rough irregular chunks (try not to eat too much) and keep separate.
  3. Break remaining chocolate into a heatproof bowl and melt.
  4. Stir the chocolate until melted and add sugar, butter, peanut butter, egg and vanilla extract, beat until well mixed.
  5. Stir in the flour all of the milk and white chocolate and half the remaining plain chocolate.
  6. The mixture will feel quite soft and drop easily from the spoon.
  7. Drop big spoonfuls in 12 piles, onto 2 or 3 baking sheets (you may need to cook in batches)
  8. Stick the remaining chunks into the cookies (2 or 3 in each).
  9. Bake for 10-12 minutes until the cookies are very slightly darker around the edges, the smell will let you know they are ready.
  10. They will firm up as they cool.
