  • 2 tsp vanilla extract

  • 400g caster sugar

  • 100g cocoa powder the posher the better

  • 4 eggs

  • 100g wholemeal self-raising flour

  • 100g chocolate chips or cranberries, raisins, dried apricots, dried cherries etc.

  • 200g butter


  1. Preheat the oven to 180C. Line a shallow baking tin with baking paper.
  2. Melt the butter in a pan, then stir in the cocoa powder well to remove any lumps.
  3. Beat the eggs in a bowl, then beat in the sugar and vanilla until smooth.
  4. Add cocoa/butter mixture and stir.
  5. Slowly add flour and choc chips until well combined. Pour into a tray and bake for 20-25 minutes.

Handy Hint

The less time you bake them for, the softer and gooier they will be. For making this cake, you may need a couple more minutes as they need to be firm enough for little hands to grab. For more depth of flavour I sometimes substitute 20g of the cocoa for nice drinking chocolate. Lovely served warm with ice cream.

    These are the ultimate Brownies. And very, very quick to make. They are gooey in the middle, and crunchy round the outside. Heaven.
