  • 225g self-raising flour

  • 25g brown sugar

  • 150ml milk

  • 1 pinch salt

  • 1 tbsp golden syrup

  • 75g raisins (or a mix of raisins and sultanas)

  • 50g walnuts chopped


  1. Heat oven to 180C/Gas Mark 4. Grease a 15cm (6in) cake tin.
  2. Place all dry ingredients in a bowl, add walnuts and fruit.
  3. Beat to a soft mixture with syrup and milk.
  4. Place in the cake tin and bake for 45 minutes.
  5. Serve warm with butter.

Handy Hint

Use a non-stick cake tin, or line with greaseproof paper.
