  • 1 tsp tomato puree

  • 1 splash balsamic vinegar

  • 600g chopped tomato

  • 2 red onion chopped

  • 1 courgette chopped

  • 1 handful cheese grated

  • 250g vegemince

  • 6 cherry tomatoes chopped

  • 2 cloves garlic finely chopped

  • 250g pasta

  • 2 peppers chopped (two different colours is nice)

  • 1 tsp garlic paste

  • 250g mushrooms sliced


  1. Boil pasta.
  2. Fry the vegetables and garlic together until cooked but not too soft. Use a spray oil if counting the calories.
  3. Add the tomato and garlic purees and stir in.
  4. Add the tinned tomatoes and a splash of balsamic vinegar.
  5. Stir and add in 1/2 bag vegemince - follow cooking instructions on the packet. Sometimes you need to add extra water but usually there's enough tomato juice.
  6. Drain pasta.
  7. Serve the vegemince mix. Add cheese to taste.

Handy Hint

Add veg in order of how long they take to cook so mushrooms and courgettes first then peppers, onion, garlic and cherry tomato.You don't want them going soggy!
We sometimes drain off the excess fluid and have in tortilla wraps with dips/cheese or with nachos.
