Veggie cheese puff

  • 1 handful cheese

  • 1 handful mixed vegetables thinly sliced (eg onion, mushroom, pepper and courgette)

  • 1 packet of puff pastry


  1. Roll out the pack of puffed pastry into a big square - place on a greased baking tray.
  2. Grate cheese all over (can use a mixture of cheese or just cheddar).
  3. Place in oven for about 10 minutes.
  4. Push the air out and then cover with the chosen veggies and put back in oven until golden.
  5. Serve with salad.

    I made this today as a side dish to some tuna pasta sweetcorn. DC loved it. Thankyou so easy to make after a busy day.
