  • 130g self-raising flour

  • 70g caster sugar

  • 2 tbsp milk

  • 1/2 tsp vanilla essence

  • 2 tbsp raspberry jam

  • 40g cornflour

  • 80g butter softened


  1. Pre-heat oven to 180C/Gas Mark 4.
  2. Line and grease 2 baking trays with greaseproof paper.
  3. Beat butter and sugar together using an electric whisk until creamy.
  4. Add milk and beat in.
  5. Sift in flour and cornflour into the butter mixture. Mix together to form a soft dough.
  6. Divide the dough into 30 pieces. Roll each piece into a ball.
  7. Place the balls on the prepared trays. Make an indentation with the end of a wooden spoon. Fill the hole with ΒΌ teaspoon of jam.
  8. Bake in the oven for 15 minutes. Transfer onto a cooling rack.

Handy Hint

Remember the jam is very hot when it come out of the oven. Leave to cool first. Sprinkle with sift icing sugar before serving.

    Really successful recipe. My nearly 2 year old absolutely loved helping me with these. Very tasty too.

    It is a very old recipe. I remember my mum used to make them when I was a child. I like to put raspberry jam on half of the biscuits and apricot jam on the other half so the I have two different flavour biscuits.
