  • 1 tsp olive oil

  • 1 chicken (ready cooked)

  • 1 pinch rosemary (or dried will be just as good)

  • 1 handful whole baby carrots

  • 2 handfuls whole new potatoes

  • 2 handfuls frozen vegetables such as peas or sweetcorn

  • 1 tbsp gravy granules

  • 1 handful root vegetables chopped to same size as potatoes

  1. Wash all of the root veg and pat dry.
  2. Put a roasting tin filled with about 1cm olive oil on about 200C/Gas Mark 6 in a preaheated oven for about 2 minutes.
  3. When oil is hot, add the potatoes, turning them in the oil.
  4. Carve the chicken now so it's ready to serve.
  5. Turn potatoes after 20 mins and add the root veg and sprigs of rosemary to the tin (turn them in the oil).
  6. Turn all root veg after another 15 mins.
  7. After another 5 mins, bring frozen peas and sweetcorn to the boil and simmer for around 5 mins, then sieve and keep in the saucepan/steamer with lid on the preserve heat. If you are having gravy prepare it now.
  8. An hour has passed from beginning to end and everything should now be cooked to near perfection so serve it up and enjoy!

Handy Hint

Ensure all root veg is chopped to around the same size. You can buy ready chopped veg. Turn veg more often for more even cooking. If you have any leftovers, just add some vegtable stock and a. liquidise into a soup or b. mash and freeze seperate baby/toddler sized portions. All ovens are different - you may need to adjust times/temp to suit.
