Courgette chutney

  • 1.1kg brown sugar

  • 2 tsp salt

  • 1 tsp cayenne pepper paprika or chilli powder also works well

  • 1/2 tsp pepper

  • 1.8kg courgette chopped

  • 1l malt vinegar

  • 1 knob fresh ginger peeled and finely chopped

  • 1.1kg tomatoes roughly chopped

  • 2-3 bulbs garlic peeled and crushed or chopped

  • 1.1kg onions peeled and chopped


  1. Place all the chopped veg, vinegar, sugar and spices in a large pan and bring slowly to the boil, stirring now and again.
  2. Simmer for around two hours (don't forget to stir as it will stick) until thick.
  3. Pour into heated jars and seal.

Handy Hint

This tastes nice straight away but should really be left for at least three months to mature.

    Making this chutney but I’m not sure that it really requires 2-3 BULBS of garlic? Someone please tell me if this is a bulbs or cloves?

    Just making a third batch of this, really pleased with it added more ginger , chili and smoked paprika and its delicious

    I make something very similar to this but add a tablespoon or so of curry paste too. (hot, medium or mild, whatever you like) It's always very popular.
