  • 2 large baking potatoes

  • olive oil spray


  1. Preheat oven to 180°C.
  2. Bake the potatoes for 45-60 minutes.
  3. Carefully cut each skin into quarters - leave about 5mm of flesh on each one - you should now have four equal sized skins for each potato.
  4. Put these on a baking tray and spray with olive oil, bake for another 20 minutes or until golden brown.
  5. Serve with your choice of dip/salsa.

Handy Hint

These are great as a starter, snack or side dish.
They can also be adapted by adding grated cheese, bacon, chillies etc.
