Chicken with butternut squash

  • 2 tbsp olive oil

  • 2 chicken breast skin on

  • 1/2 butternut squash

  • 3 chives chopped

  • 1 Greek yoghurt to serve


  1. Heat the oven to 220C.
  2. Peel the squash and cut into 5 mm slices. Layer over the bottom of a small baking dish. Sprinkle over the chives. Season with salt and pepper.
  3. Place the chicken on top. Drizzle over the oil.
  4. Bake in the oven for 25 minutes (no need to cover) until the skin is crispy and golden. Meanwhile, steam the green beans for five minutes.
  5. Serve the chicken and squash with the green beans.

    Very easy mid week healthy meal for parents. You could double up and make this a sunday lunch - eg use the whole squash and two chicken breasts and two legs. Veyr easy preparation.
