Baked salmon and mushroom

  • 1 onion finely chopped

  • 4 salmon fillets

  • 1 garlic (to taste)

  • 1 dried rosemary

  • 250g mushrooms chopped


  1. Preheat the oven to 180-200C.
  2. Fry the onion in olive oil until clear and soft. Add in the mushrooms and garlic and cook until soft. Add in the rosemary and season to taste (you can also add in other things like chopped up grilled artichokes, pine nuts, soft cheese etc.)
  3. Place each salmon fillet in the middle of a square of tinfoil. Divide the mushroom mixture between them, close up the parcels and cook in the oven for 15-20 minutes (until the salmon is cooked through).

Handy Hint

This can be served with rice, boiled new potatoes or crusty bread.
You can prepare the mushroom mixture in advance, and then just assemble and cook later on

    Very easy, quick and healthy. Just be careful when opening the parcels, as there is a lot of steam
