One-dish chicken

  • 400g chicken breast if large pieces, cut lengthways as you want about four long, thin breasts

  • 4 slices parma ham

  • 300g cherry tomatoes

  • 2 cloves garlic unchopped and unpeeled

  • 1 tsp mixed herbs or combination of oregano/thyme/other mild Italian herbs

  • 1 butternut squash peeled and cut into chunks


  1. Wrap each piece of chicken breast in a slice of parma ham and place in a large roasting tray or dish.
  2. Put all the chunks of butternut and tomatoes between the meat, pricking each tomato with a sharp knife (the more vegetables you have, the better).
  3. Toss in the garlic and sprinkle the herbs over and drizzle a little olive oil over the vegetables (the chicken will be moistened by the fat from the ham so shouldn't need much).
  4. Place the dish in a pre-heated oven at about 160C for about 40 minutes.
  5. If you want, you can stir the vegetables a little about half way through. Serve as is, or with some couscous or mashed potato.

Handy Hint

Up the vegetable quantity significantly and you can serve four easily - with 100g of chicken per person which limits the cost and also makes it lower fat/calories.
You can replace the butternut with sweet potato for a similarly delicious taste and look.

    The main thing that takes the time is wrapping the chicken and peeling and slicing the butternut or sweet potato, but this is a fantastically easy meal for when you can't be bothered to cook but need something healthy and tasty - if you've got the time, do the wrapping and chopping in the morning so you just have to pop it into the oven when you get home. And it works well too as a casual supper for friends
