Lamb with black olives

  • 1 onion chopped

  • 1 splash olive oil

  • 1 tbsp rosemary

  • 100g black pitted olives

  • 4 lamb chops

  • 1 splash Worcestershire sauce (or beer)


  1. I use a few lamb chops and lamb steaks cut in half. Wash the lamb and cook on its own in a pan for a few minutes.
  2. Throw away the fat and add olive oil, rosemary and a chopped onion.
  3. Season and cook for a while (to brown it a bit and I'd say 15min). Then add white wine or beer and leave it to cook on a slowish heat until the sauce is reduced.
  4. Add the olives 10 minutes before the end.
