American breakfast pancakes

  • 1 tsp baking powder

  • 50ml sunflower oil

  • 300ml skimmed milk

  • 225g plain flour

  • 2 large free range eggs


  1. Blitz all the ingredients together in a blender or with an electric hand whisk.
  2. Heat a little oil in a frying pan until smoking. Spoon in a dollop of mixture. Turn heat down to medium and cook until surface bubbles all across, then flip over and cook second side for 1-2 minutes.
  3. Serve with jam, chocolate, honey, lemon and sugar, maple syrup, butter or something equally nice.

Handy Hint

Use a spatula to gently lift the pancake and check the underside to make sure the heat isn't too high and it's not burning.

    Makes great finger food for breakfast. Good for dads and kids to do for weekend brunch. Cook in advance, freeze & reheat for instant pancakes (few second in microwave or carefully re-fry)
