  • 1 vegetable stock cube or you can use water if no stock handy

  • 2 tomatoes

  • 1 handful sultanas or other dried fruit

  • 1 bag couscous

  • 2 handfuls vegetables mixed, chopped up small


  1. Put the vegetables in a pan with about half a pint of stock or water (or the tomato juice if using tinned tomatoes) and the sultanas.
  2. Boil until the veg is cooked.
  3. Pour into a jug and add more boiling water if there is no longer half a pint.
  4. Add about half a mug of couscous (or whatever it says on the packet) and leave to stand for 5 minutes.
  5. Stir and serve.
