Easy sausage pasta

  • 1 handful onion chopped, frozen or fresh

  • 1 tin chopped tomato

  • 1 handful coconut milk grated

  • 1 handful pepper sliced, frozen or fresh

  • 1 tin ratatouille or another tin of tomatoes

  • 400g pasta

  • 1 pinch herbs or seasoning of your choice

  • 4 sausages cooked, leftovers

  • 1 handful frozen peas


  1. While the pasta is cooking, heat the onions/peppers/peas in another pan. Add garlic if you like.
  2. Chop the sausages into four pieces and add them to the pan. Heat through.
  3. Once cooked, add tinned tomatoes and/or ratatouille and any seasoning or herbs. To give the sauce a more creamy flavour, I add a large handful of grated cheese and stir until melted.
  4. Drain the cooked pasta and pour over the sauce and stir.
  5. Serve and top with a bit of grated cheese.

Handy Hint

Use bacon or ham as an alternative to the sausages. Could also serve with salad. Add chilli powder and chilli flakes for a hotter twist!

    Quick and easy, easy to variate with whatever you have at home. If you have fresh tomatoes to use up then make a cross on each end with a knife place in a dish with boiling hot water for 5 minutes then peel and chop and add to the sauce.
