  • 2 tbsp vegetable oil

  • 340ml vegetable stock

  • 2 chicken breast

  • 1 tbsp curry powder

  • 1 knob ginger peeled and finely chopped (a medium cube)

  • 2 red onion chopped

  • 4 slices bacon chopped

  • 170g rice

  • 2 cloves garlic finely chopped

  • 110g frozen peas


  1. Heat the oil in a saucepan and add the garlic, ginger and curry powder.
  2. Cook for 1 minute over a medium heat.
  3. Add the chicken pieces to the pan and cook for 4 minutes on each side.
  4. Add the bacon and leek to the pan and cook for 2 minutes, stirring all the time.
  5. Add the rice and stir to coat it with the oil, then add the stock.
  6. Cover and simmer for 20 minutes, adding more stock if the rice gets too dry.
  7. Add the peas and cook for a further two minutes until the peas are warmed through.
  8. Serve.
