Bonfire muffins

  • 250g self-raising flour

  • 100g caster sugar

  • 120ml milk

  • 1 pinch salt

  • 1/2 tsp cinnamon

  • 30g ginger finely grated

  • 1/2 tsp nutmeg

  • 2 eggs

  • 150g butter


  1. Mix butter and caster sugar together to form creamy paste.
  2. Add the eggs and beat with a whisk until mixture is light and fluffy.
  3. Fold in flour, salt and spices.
  4. Add milk to keep mixture moist.
  5. Pour mixture into lightly oiled muffin moulds and place in pre-heated oven at 180C for 20 minutes.
  6. Sprinkle with icing sugar or popping candy to add some fun for the kids.

Handy Hint

To keep the muffins light and fluffy beat the eggs in really well - I tend to beat longer then I need to and it seems to work.

    Got this recipe from the Master Chef winner Mat Follas and my kids loved them even with the spices - when you cook them their scent is so homely which makes them really appealing. We made them for Bonfire night last year and they went down a treat - I'll be baking them for Bonfire night again this year.
