  • 2 tbsp olive oil

  • 4 small carrot peeled and cut in half lengthways

  • 1 leek washed and cut into chunks

  • 3 small parsnip peeled and cut in half lengthways

  • 1 eating apple cut into quarters

  • 2 cloves garlic sliced

  • 4 pork chops or steaks

  • 16 small new potatoes cut into quarters

  • 4 slices lean dry cured smoked bacon (optional)


  1. Preheat the oven to 200C/Gas Mark 6.
  2. Take a rasher of bacon and wrap around each pork steak.
  3. Place all the remaining ingredients onto 1 large or 2 smaller baking trays and toss together to coat in oil.
  4. Spread out and arrange the ingredients in a single layer on the baking sheet.
  5. Add the pork on top of the vegetables.
  6. Place in the preheated oven for 25 minutes until the meat is tender and juices run clear, and then serve with additional seasonal green vegetables.
