  • 1 onion chopped

  • 2 tbsp flour

  • 1 tbsp mustard

  • 1kg oxtail

  • 250ml red wine

  • 2 bay leaves

  • 2 carrot chopped


  1. Heat a little oil in a casserole dish (one that has a lid) and fry the flour for a minute or two.
  2. Quarter the onions and carrots and add to the casserole with all the other ingredients.
  3. Add water to cover and bring to the boil.
  4. Put the lid on the pot and cook in a very slow oven for 8 hours, or alternatively, you can use your slow cooker.

Handy Hint

nicer a day after cooking. can take fat off when it is cool. could use any meat i suppose but the oxtail makes a nice sauce.
