Leek, ham and stilton bake

  • 120ml double cream

  • 1 handful cheddar grated

  • 120ml dry white wine

  • 230g ham cooked and diced

  • 230g stilton crumbled

  • 2 leeks cleaned and finely sliced

  • 1 medium cauliflower chopped into florets (for topping)


  1. Preheat the oven to 180C/Gas Mark 4.
  2. Boil or steam the cauliflower and mash well with butter (and a dash of cream or cheese if required).
  3. Gently fry the leeks in butter and oil.
  4. Add wine to the leeks and allow to reduce and thicken.
  5. Add double cream, ham and stilton, allow the cheese to melt into the sauce.
  6. Transfer the leek and ham mixture to a lasagne-type dish, cover with the cauliflower topping.
  7. Bake until the topping is golden brown.

Handy Hint

The original recipe uses mashed celeriac but I think cauliflower works better as a topping here. I use Waitrose diced ham hock and any old blue cheese! Lovely served with steamed green vegetables.
