  • 1 tbsp olive oil

  • 1 beef tomato

  • 1 clove garlic crushed

  • 1 ball mozzarella

  • 2 ciabatta or panini rolls

  • 1 bunch fresh basil shredded

  • 8 slices Parma ham


  1. Slice the tomato into large slices and marinade in the basil, olive oil and crushed garlic for an hour.
  2. Slice open the ciabatta OR panini and layer on the parma ham, then marinated tomato. Cover with mozarella and drizzle any remaining olive oil marinade over the ciabatta/panini.
  3. Toast in a sandwich toaster or toasting bag until the mozarella has melted.

Handy Hint

Don't burn your tongue on the melted mozzarella (especially the kids).
Substitute Parma ham for wafer thin cooked ham (cheaper, and the kids seem to like it even more).
Substitute ham for roasted courgette and peppers for a veggie alternative.

    This was my first lunch once I could reintroduce parma ham after pregnancy - yum! Lovely and warming for an Autumnal Saturday lunchtime.
