  • 340g self-raising flour

  • 110g sugar

  • 2 tsp mixed spice

  • 1 eggs beaten

  • 280g mixed fruit

  • 300ml strong black tea


  1. Soak the fruit in the tea for about 30 minutes until the fruit has swollen up.
  2. Mix the dry ingredients, add the tea and fruit and the egg. Mix gently but don't over mix.
  3. Pour into a 2lb loaf tin and bake at 180C/Gas Mark 4 for about 60-80 minutes.

Handy Hint

Don't bother waiting for the tea to cool before pouring it over the fruit.
