  • 50g onion chopped

  • 1 handful cheddar (optional)

  • 50g green pepper chopped

  • 50g red pepper chopped

  • 50g celery stick chopped

  • 680g turkey cooked

  • 2 tins cream of mushroom soup

  • 565-680g potatoes mashed

  • 28g butter

  • 110g mushrooms sliced or quartered


  1. Preheat oven to 170C/Gas Mark 3.
  2. In a frying pan, sauté the peppers, celery and onion in the butter until softened.
  3. Add the mushrooms to the vegetables and cook for 2 minutes. Remove from the heat.
  4. Mix the vegetables and the diced turkey and season to taste.
  5. Place in a casserole dish. Pour the mushroom soup over the mixture. Spread or pipe the mashed potatoes on top(sprinkle with grated cheese, if used).
  6. Bake for 30-35 minutes or until lightly golden.

Handy Hint

Place under a preheated grill if desired.
