  • 1 onion chopped

  • 345ml milk

  • 1 potato large, chopped into small cubes

  • 2 tbsp flour

  • 1 red pepper chopped

  • 1 handful fresh parsley (to garnish)

  • 230ml fish stock

  • 1 bay leaves

  • 400g white fish chopped into large chunks,

  • 100g butter

  • 1 handful lardons

  • 75g peas or sweetcorn (optional)


  1. Melt the butter and cook the red pepper, bacon lardons, and onion.
  2. When cooked take off heat add the flour.
  3. Return to heat and add milk and stock gradually stirring to avoid lumps.
  4. Return to heat and add bay leaf, potato, fish, peas. Should be cooked in about 15 minutes.
  5. Garnish with fresh parsley if desired and season to taste.

Handy Hint

Can swap white fish for prawns and mussels if you prefer seafood. (Add seafood later in the cooking process as they don't take as long).
