  • 175g self-raising flour

  • 75g icing sugar

  • 175g caster sugar

  • 5 tbsp milk

  • 1 lemon juiced

  • 1 lemon rind grated

  • 110g soft margarine

  • 2 eggs


  1. Preheat oven to 180C/Gas Mark 4 and line a 2lb loaf tin.
  2. Put the margarine, flour, caster sugar, milk, rind and eggs all in a large bowl and beat.
  3. Place the mixture into the tin.
  4. Bake for 55 minutes on the middle shelf of the oven.
  5. While the cake is cooking, place a small bowl with the icing sugar and lemon juice over a pan of simmering water and let the sugar dissolve.
  6. After 55 minutes, take the cake out of the oven, stab all over with skewer or fork and pour the lemon syrup carefully over the cake. You must do this while the cake is hot to enable the syrup to soak in quickly.
  7. Leave in the tin until cold.

Handy Hint

You can easily double quantities to make two at once. They freeze very well.

    DS (15) made this today, but substituted orange for lemon (we had some oranges that needed to be used up) and it was gorgeous! Plus very entertaining watching him bake - it was about to go in the oven when we realised he had forgotten the sugar - well worth the clean up operation!!

    Nice easy recipe, made a fab cake! I used a fan oven so reduced the heat to 160 degrees and it took 60 minutes. Will definitely do this one again.

    I followed this to the letter and for the first time EVER, made the perfect lemon drizzle cake!!! I think the fact I used a loaf tin rather than a cake tin must have been the secret as everytime I follw a cake tin recipe, it goes wrong! Thank you Superfurryanimal!
