  • 1 splash oil

  • 250g pasta

  • 1 tbsp grated Parmesan (for sprinkling)

  • 100g mature cheddar cheese grated

  • 125ml reduced fat crème fraiche

  • 8 slices organic streaky bacon cut into small pieces

  1. Cook the pasta as directed on the packet in a large pan. If you are in a real hurry, fresh pasta will only take 2 minutes!
  2. Heat some oil in a non-stick frying pan and cook the bacon until nicely crispy.
  3. Drain the cooked pasta, return to the pan and immediately add the grated cheddar and half the creme fraiche and stir until the cheese has melted.
  4. Put the pan on a very low heat, add the rest of the creme fraiche and stir for a minute or so until everything is mixed together.
  5. Serve with a sprinkling of Parmesan.

Handy Hint

Even quicker and less mess; cut up some organic ham instead of cooking bacon and stir this in with the cooked pasta, creme fraiche and cheese.
