Blueberry muffins

  • 125g caster sugar

  • 175ml milk

  • 2 tsp baking powder

  • 150ml vegetable oil

  • 2 eggs

  • 200g blueberries

  • 200g plain flour


  1. Mix the egg, milk and oil together.
  2. Sift the flour and baking powder in a separate bowl and then mix with the sugar.
  3. Add the liquid mixture to the flour mix and beat together well (it doesn't need to be smooth though).
  4. Add the blueberries.
  5. Put into muffin cases and bake for 20-25 minutes at 180C/Gas Mark 4.

Handy Hint

Save a few blueberries to add to the top of the muffins once spooned out, they are heavy so tend to sink.

    Incredibly easy for low skilled cook...hardly anything can go wrong!
