125g caster sugar
2 tsp baking powder
150ml vegetable oil
200g plain flour
- Mix the egg, milk and oil together.
- Sift the flour and baking powder in a separate bowl and then mix with the sugar.
- Add the liquid mixture to the flour mix and beat together well (it doesn't need to be smooth though).
- Add the blueberries.
- Put into muffin cases and bake for 20-25 minutes at 180C/Gas Mark 4.
Save a few blueberries to add to the top of the muffins once spooned out, they are heavy so tend to sink.
