  • 1 tsp baking powder

  • 225g sugar

  • 220g flour

  • 1 eggs

  • 3-4 ripe bananas

  • 25g nuts (eg walnuts or almonds)

  • 115g butter


  1. Cream the butter and sugar and put them into a medium-sized bowl.
  2. Add the egg.
  3. Chop the nuts and put them into the bowl.
  4. Mash the bananas and add them.
  5. Add the flour and baking soda.
  6. Bake in a loaf tin for 45 minutes at 180C.

Handy Hint

It freezes well, so I tend to make a batch of a few loaves at a time and freeze in half loaf sizes. Very handy when someone calls in for coffee unexpectedly.

    This is a very simple way of using up overripe bananas and, my, do I feel like a domestic goddess when the smell wafts through the house. It tastes great with a cup of tea too!
