Banana and carrot pancakes

  • 1/2 tsp olive oil

  • 3 tbsp carrot grated

  • 0.5 banana

  • 1 pinch cinnamon optional


  1. Mash the banana and carrot together, and stir in the cinnamon if using.
  2. Heat the oil in a frying pan over a medium heat, and add the mixture once the oil is warm (about 2 tbsp per pancake).
  3. Press each pancake flat and fry for about 3 minutes or until the underside starts to caramelise.
  4. Then flip carefully and fry for a few more minutes.
  5. The pancakes should be slightly soft but firm enough to be handled by little hands.
