  • 1 baking potato


  1. Bake some potatoes as normal but don't score the tops. Instead, cut around the top to form a lid.
  2. Just before they are fully cooked, scoop out the flesh and mix with any filling you fancy - cottage cheese and chopped spring onion is a favourite round here, or you could try tuna if you like that kind of thing.
  3. Add salt and pepper to taste and return to the oven for a few minutes. Crunchy outsides, scrummy insides!

Handy Hint

Butter helps but is not essential if you are the sort of person who thinks sugar on weetabix is evil. And you can leave the salt and pepper out if you like.
