Smooth potato and leek soup

  • 2 vegetable stock cube

  • 4 potatoes peeled and cut in quarters

  • 1 leeks

  • 1 onions


  1. Chop and peel the onion and leek and sauté in a saucepan until soft.
  2. Add the potatoes.
  3. Quickly add in the vegetable stock (following instructions on packet if necessary)
  4. Let it simmer for 30-40 minutes until potatoes are soft
  5. When soup is ready, blend it with a hand blender, and if too thick, add in milk and season with salt and pepper.
  6. Serve immediately.

( ) Potato and Leek soup is a great comforting soup, as well as being an awesome immune system booster - this would make a great entry into our 'recovery' theme this month!

    I add some hard mature cheese like parmesan or cheddar as a garnish to make the dish even more savoury! I always use a good floury potato like Maris Piper, Kind Edward or a Rooster potato to get a nice smooth texture for this recipe.... See for more info on varieties & recipes.....
