  • 1 chicken breast (optional)

  • 4 spring onion sliced

  • 1 red pepper sliced

  • 1l stock or miso soup

  • 2 tbsp dark soy sauce

  • 4 closed cup mushrooms sliced

  • 1 handful fresh coriander chopped

  • 1 carrot grated

  • 300g egg noodles


  1. Heat a pint of veg/chicken stock or miso soup to simmering point.
  2. Cut chicken (if using) into thin strips and add to stock.
  3. Cook for 10-15 minutes.
  4. Add vegetables and noodles and cook for further five minutes.
  5. Just before serving, add 2 tablespoons of soy sauce and a handful of coriander.
  6. Voila!

Handy Hint

You can add almost any veg to this. Chopped lettuce (yes, lettuce) is good too.

    this is really tasty AND it's low fat. The noodles mena you won't have a big hunk of white bread and butter with it!
