  • 250g self-raising flour

  • 1/2 tsp vanilla essence

  • 170g golden caster sugar

  • 400g very ripe bananas coarsely mashed

  • 2 large eggs beaten

  • 125g butter (at room temp)

  • 100g pecans coarsely sliced


  1. Pre-heat oven to 180C/160C Fan/Gas Mark 4.
  2. Beat butter with sugar with electric mixer till pale and fluffy.
  3. Gradually beat in eggs and vanilla essence.
  4. Carefully fold in bananas/pecans and flour using big metal spoon.
  5. Transfer mix into a prepared 1kg loaf tin and smooth its surface.
  6. Into oven for 1hr or until golden and firm to touch or skewer comes out clean.

    this is lovely on its own but I suppose a cream cheese frosting with cinammon dusting and chopped pecans would spruce it right up
