  • 1 sunflower oil

  • 4 eggs beaten

  • 1 4-5 spring onions finely chopped

  • 15g bunch of coriander chopped

  • 15g bunch of parsley chopped

  • 100g halloumi grated


  1. Beat the eggs lightly and mix in the rest of the ingredients.
  2. Heat a heavy bottomed 8” frying pan with a little oil and pour in the mixture. Cover with a glass lid if possible and leave on a low heat.
  3. Don't open the lid and let it cook until the middle is almost set. Carefully slide out onto a plate and flip it back in the pan to cook the other side.
  4. Cook for a few more minutes on a low heat.
  5. Slide out onto a plate lined with kitchen paper. Cut into wedges and serve.

Handy Hint

Excellent as a sandwich filler with sliced beef tomatoes.
