  • 130g self-raising flour (wholemeal is nicest)

  • 100g caster sugar

  • 1 tsp baking powder

  • 1/2 tsp mixed spice

  • 2 browning medium bananas (peeled and mashed with a fork)

  • 55g butter (softened) plus extra for greasing

  • 1 large free range eggs


  1. Preheat oven to 180C/160C Fan/Gas Mark 4.
  2. Grease a loaf tin (approx 22cm x 12cm in size) with butter.
  3. In a large bowl, mix everything together, combining well with a fork. You may need a drop of milk to achieve a loose dropping consistency, depending on how mushy the banana is.
  4. Pour into the tin and bake for 35-40 mins, or until a skewer inserted into the middle comes out clean. Leave to cool in the tin, then turn onto a wire rack.
