Bacon and egg spaghetti

  • 6 slices smoked bacon

  • 1 chicken stock cube (not the crumbly kind)

  • 2 eggs

  • 2 cloves garlic

  • 2 cloves garlic

  • 1 pinch mixed herbs

  • 1 handful grated Parmesan

  • 250g organic spaghetti


  1. Put the spaghetti on to boil, the whole thing will be made by the time its al dente.
  2. Chop the bacon into approx 1 cm strips crossway's not length ways and put it in a large frying pan to cook until crispy.
  3. Meanwhile, dissolve the chicken stock cube in a third cup of boiling water, add the beaten eggs plus a good sprinkling of mixed herbs.
  4. When the bacon is almost cooked, add the chopped or crushed garlic and cook for a minute then remove from heat.
  5. When the pasta is al dente (as per instructions on pack) restart the heat under the bacon and when its nice and hot, chuck in the pasta and the egg mixture.
  6. Move it all around with a big spoon until the egg is cooked and throw onto plates.
  7. Sprinkle with the Parmesan, ground pepper and a drizzle of olive oil.

Handy Hint

I often serve this onto of a handful of rocket leaves.

    This is fast, easy and delicious. Its good when you dont have much in the fridge and one of those dishes you have to eat real fast without talking, plus kids love it.
