  • 1 stock cube

  • 1 green pepper chopped

  • 1 red pepper chopped

  • 500ml water

  • 225g chorizo chopped into bite-sized cubes

  • 1 handful frozen peas

  • 1 onions chopped

  • 1 carrot grated

  • 230g rice


  1. Gently saute onion in butter.
  2. Add chorizo.
  3. Add stock to frying pan and add rice.
  4. Add chopped vegetables and allow to simmer.
  5. Add the frozen veg after a while so they don't over cook
  6. If the rice is not al-dente before water is soaked up add a little more until it's fully cooked.
    (adapt quantities to number of people sitting down to eat)

    Have just given this to my three (17, 13, 10) and they LOVED it. DD2 (10), very very fussy eater, ate it all up and said 'this is the best meal ever'. So I think we'll be doing this one again. Like Wannabe, I added a garlic glove and some paprika as well as a sprinkle of salt. Delicious :)

    I said Don't know to vegetarian and gluten free cos you can make it veg only and presumably gluten free if you use certain ingrediants Never tried to freeze it as it is wolfed in one go not sure if you could make in advance, you could certainly prepare and chop in advance and store till needed
