Olive oil shortbread bites

  • 125ml olive oil (not extra virgin)

  • 125g caster sugar

  • 1 tsp ground cinnamon

  • .5 lemon zested

  • 250g plain flour


  1. Preheat oven to 180C/160C fan/Gas Mark 4.
  2. Grease a baking sheet, or line with baking parchment/silicon paper
  3. Sift the flour into a large bowl and add the sugar and lemon zest.
  4. Make a well in the flour and pour in the oil.
  5. Mix gently to form a dough (I use the blade of a table knife until it starts to come together, and then my hands). Handle the dough as lightly as possible.
  6. Gently form the dough into walnut-sized balls, and flatten slightly in the palm of your hand.
  7. Place on the baking sheet, well spaced, and sprinkle each ball with cinnamon.
  8. Put in the oven and bake for 25-30 minutes.

Handy Hint

You can use any lightly flavoured oil - I use rapeseed.
Try replacing some of the oil with a flavoured one e.g. walnut.
I add 1/4 teaspoon of Boyjian lemon oil to the olive oil before mixing.

    These are very quick and easy to make. The biscuits are crisp and crunchy on the bottom, and melt-in-the-mouth on top (or at least that's how they always come out for me!).
