Easy tomato and lentil soup

  • 1 onion chopped

  • 1l vegetable stock (or chicken)

  • 2 tins chopped tomato

  • 2 cloves garlic

  • 1 tin lentils


  1. Soften the onion and garlic in oil or butter.
  2. Add the tinned tomatoes, tin of washed and drained lentils and stock.
  3. Simmer for 20 minutes then season to taste.
  4. Cool and then blend to smooth. Add more liquid if necessary to adjust thickness of soup.
